‘Wow – that’s a lot of grated apple’ I thought. So in the light of this new knowledge, I did in fact use the right sort of apple, but mine were on the large size – recipe needs medium dessert apples. Some apples lose their shape during cooking and turn to mush but there are certain varieties that do keep their shape. They also store better than eating types. I have often wondered what the differences are between cooking, eating and dessert apples were, well wonder no more…(I should point out that I used to hate all raw fruit and it is only in recent years that I have forced myself to eat it and now being older, I enjoy a lot of it.)Įating also known as Dessert Apples: tend to be sweeter so best eaten raw, so if used in cooking (which is fine) any added sugar in the recipe should be adjusted.Ĭooking: tend to more tart with a lower sugar content so are best cooked. I should add at this point that I didn’t know the difference between a dessert apple and the regular eating apples that I had – after the great failure I now suspect that there must be a significant difference – let’s have a look… As I had so many apples, I decided to double the recipe to make 12 muffins, so I cored and grated 6 apples. I read the recipe to say 3 dessert apples, cored and grated – to make 6 muffins. It started badly from the very beginning… Perfect, I thought, as I had a lot of apples to use up, what better way, than in some yummy muffins. Along with the words – limp, stodgy and un-palatable!ĭelia’s next Cookery Lesson has been released – Lesson 6: Muffins. On Sunday I created what can only be described as a baking dis-ah-ster dah-ling – if my Spiced Apple Muffins had been twirling around the dance floor on Strictly Come Dancing, those are the words that Craig Revel Horwood would’ve had to use. I also mentioned the fact that you should always read the recipe through fully before beginning baking. In my previous post I mentioned what an impatient cook I am.
